In January of 2024 I took a solo trip to Paris, and had a truly transformative meal at a restaurant called Au Passage. House made rillettes with a perfectly dressed salad, a duck confit and scamorza tart, the most incredible oyster I’ve ever had in my life, perfectly cooked grilled octopus, and a stunningly delicate lemon sorbet. The oyster alone had me planning my next trip. Toward the end of this meal, I had this really emotional moment of nostalgia and missing my Dad, who passed away when I was a kid. He loved food and restaurant culture and spent a lot of his life in that world. And I thought that this would have been a nice moment to share with him. And in the past I might have let that moment slip away, I might have wanted it to slip away, but this time I tried to focus on it and live in it for as long as possible. Eventually, it slipped away; there was a lot going on, it was a busy night, many distractions. That’s the journey of this piece, wanting to dwell in something so badly but having it ultimately, against your will melt away.
